Classics We Love: Remember the Maine

One of my favorite Rye classics out there has got to be the Remember the Maine. It is a Manhattan variation that I first came upon when it was on on the opening menu at Heaven's Dog in San Francisco about 10 years ago. The entire menu was based off of drinks from Charle’s H. Baker’s seminal classic, the Gentleman’s Companion. As part of the opening crew, I was fortunate enough to soak in tons of inspiration from the top notch bar program & my fellow staff there. Years later, I still make this drink for people all of the time, when they are looking for something Manhattan-ish, yet with just a little added pop.

REMEMBER THE MAINE

2oz Rye

.75oz Sweet Vermouth

.25oz Cherry Herring

3 dashes Absinthe

METHOD: Stir  

GLASSWARE: Nick & Nora   

GARNISH: Lemon Twist
