One of our favorite apple brandy classics has got to be the Pan-American Clipper. It first saw print in Charles H. Baker’s  Gentleman’s Companion, or Around the World with Jigger, Beaker and Flask, which was first published in 1939. The recipe itself is essentially a Jack Rose, but with the addition of a touch of absinthe. Although, the change might seem very subtle it is a wonderful example of just how different the end product can be when you make a subtle change to a cocktail recipe. While it truly shines with a well-made calvados, it also works beautifully with a bonded American apple brandy.
